bullet2 Carrot Cake Recipe

Carrot Cake

What You Need:

  1. 250g softened, unsalted butter

  2. 250g castor sugar

  3. 150g carrots

  4. 250g self-raising flour

  5. 100g ground almonds

  6. 1 tsp baking powder

  7. I tsp ground cinnamon

  8. 1 tsp ground mixed spice

  9. 4 eggs, beaten

  10. Splash of milk

How to Make It:

  1. Line a 23cm round cake tin with non-stick baking parchment

  2. Beat the butter until very soft

  3. Add sugar and keep beating until the mixture is fluffy

  4. Grate the carrots finely and blot with kitchen roll to mop up excess moisture

  5. Add to the butter mixture

  6. Add the rest of the cake ingredients

  7. Beat thoroughly

  8. Add a splash of milk if the mixture is too stiff

  9. Spoon into the lined tin and level the surface

  10. Bake at 180 degrees Celsius or 350 degrees Fahrenheit for 1 hour and 15 minutes

  11. Cover the top of the cake with a piece of kitchen foil after 30 minutes to stop it getting too brown

  12. Cool it and then serve

bullet2 Carrot Soup Recipe

Carrot Soup

What You Need:

  1. 4 carrots

  2. 1 small head of celery

  3. 1 fair-sized onion

  4. 1 turnip

  5. 3 oz. breadcrumbs

  6. 1 oz butter

  7. 1 blade of mace

  8. Salt and pepper to taste

How to Make It:

  1. Scrape and wash the vegetables, and cut them up small

  2. Set them over the fire with 3 pints of water, the butter, bread, and macev

  3. Let all boil together, until the vegetables are quite tender

  4. Rub them through a sieve

  5. Return the mixture to the saucepan

  6. Season with pepper and salt

  7. If too thick add water to the soup, which should be as thick as cream

  8. Boil the soup

Pie Dough

What You Need:

  1. 200g icing sugar

  2. 3 eggs

  3. 300g cake flour

  4. 200g butter

How to Make the Dough:

  1. Mix the butter and icing sugar until fluffy

  2. Add in eggs one by one

  3. Add in the flour to form soft dough

  4. Roll out the dough about 0.5cm thick into the pie mould

Pie Filling

  1. 4 eggs

  2. 200g low calorie sugar

  3. 50g honey

  4. 250ml corn oil

  5. 5g salt

  6. 325g flour

How to Make the Filling:

  1. Mix the eggs and sugar in a bowl, semi beaten

  2. Add in flour, corn oil, honey and salt and mix well
  3. Pour all the ingredients into the pie mould

  4. Bake at 170 degrees Celsius for about 25 to 30 minutes or until golden brown
