Carrot Cake Recipe
Carrot Cake
What You Need:
- 250g softened, unsalted butter
- 250g castor sugar
- 150g carrots
- 250g self-raising flour
- 100g ground almonds
- 1 tsp baking powder
- I tsp ground cinnamon
- 1 tsp ground mixed spice
- 4 eggs, beaten
- Splash of milk
How to Make It:
- Line a 23cm round cake tin with non-stick baking parchment
- Beat the butter until very soft
- Add sugar and keep beating until the mixture is fluffy
- Grate the carrots finely and blot with kitchen roll to mop up excess moisture
- Add to the butter mixture
- Add the rest of the cake ingredients
- Beat thoroughly
- Add a splash of milk if the mixture is too stiff
- Spoon into the lined tin and level the surface
- Bake at 180 degrees Celsius or 350 degrees Fahrenheit for 1 hour and 15 minutes
- Cover the top of the cake with a piece of kitchen foil after 30 minutes to stop it getting too brown
- Cool it and then serve
Carrot Soup Recipe
Carrot Soup
What You Need:
- 4 carrots
- 1 small head of celery
- 1 fair-sized onion
- 1 turnip
- 3 oz. breadcrumbs
- 1 oz butter
- 1 blade of mace
- Salt and pepper to taste
How to Make It:
- Scrape and wash the vegetables, and cut them up small
- Set them over the fire with 3 pints of water, the butter, bread, and macev
- Let all boil together, until the vegetables are quite tender
- Rub them through a sieve
- Return the mixture to the saucepan
- Season with pepper and salt
- If too thick add water to the soup, which should be as thick as cream
- Boil the soup
Carrot Pie
Pie Dough
What You Need:
- 200g icing sugar
- 3 eggs
- 300g cake flour
- 200g butter
How to Make the Dough:
- Mix the butter and icing sugar until fluffy
- Add in eggs one by one
- Add in the flour to form soft dough
- Roll out the dough about 0.5cm thick into the pie mould
Pie Filling
- 4 eggs
- 200g low calorie sugar
- 50g honey
- 250ml corn oil
- 5g salt
- 325g flour
How to Make the Filling:
- Mix the eggs and sugar in a bowl, semi beaten
- Add in flour, corn oil, honey and salt and mix well
- Pour all the ingredients into the pie mould
- Bake at 170 degrees Celsius for about 25 to 30 minutes or until golden brown
