Blueberry recipes for blueberry muffins, pies, cheesecake and smoothie
Blueberry Muffin Recipe
Blueberry Muffin
What You Need:
- 110g or 4oz plain flour
- 110g or 4oz butter
- 65g or 2½ oz caster sugar
- 2 eggs
- 1½ tsp baking powder
- 125g or 4½ oz fresh blueberries or equivalent in frozen blueberries
- a pinch of nutmeg
How to Make It:
- Cream the butter and sugar
- Slowly add the eggs and mix for 3 minutes
- Add flour, baking powder and nutmeg
- Refrigerate for at least an hour, preferably overnight
- Place a spoonful of muffin mixture into each muffin case, filling each to just over half way
- Stud or insert each muffin with about 8 blueberries
- Bake in an oven set at 200C or 400F for 20 minutes or until golden on top
- Serve with cream
Blueberry Pie Recipe
Blueberry Pie
What You Need:
- 1 package of pie crust (2 crusts)
- 3 pints of blueberries
- 2 tbsp freshly squeezed lemon juice
- 1/4 cup cornstarch
- 1/2 cup sugar
- 1/4 teaspoon ground cinnamon
- 2 tbsp unsalted butter
- 1 egg
- 1 tbsp milk
How to Make It:
- Prepare crust. Place one of the circles in the pie pan
- Whisk egg and milk together to make an egg wash and set aside
- Combine blueberries, flour, cinnamon, lemon juice, and sugar and place in the chilled bottom crust of the pie pan
- Dot the top with butter pieces
- Roll out the remaining dough to the same size and thickness
- Brush the rim of the crust with the egg wash
- Place the other piece of the pie crust on top
- Trim to 1/2 inch over the edge of the pan and crimp the edges with a fork or your fingers
- Transfer the pie to the refrigerator to chill until firm or about 30 minutes
- Heat oven to 425°F
- Remove from refrigerator and brush the top with egg wash
- Score the pie on the top with two perpendicular cuts so steam can escape while cooking
- Bake for 20 minutes at 425°
- Reduce the heat to 350°F and bake for 30 to 40 minutes more or until juices are bubbling
- Let cool before serving
Blueberry Recipe - Cake
Blueberry Cheesecake
What You Need:
- 1 1/2 cup vanilla wafer crumbs
- 1/4 cup melted margarine
- 1 envelope unflavored gelatin
- 1/4 cup cold water
- 16 oz softened cream cheese
- 1 tbsp lemon juice
- 1 tsp grated lemon peel
- 7 oz marshmallow cream
- 3 cups thawed frozen whipped topping
- 2 cups frozen or fresh blueberries
How to Make It:
- Combine crumbs and margarine
- Press onto bottom of a 9-inch spring form pan
- Chill
- Soften gelatin in water and stir over low heat until dissolve
- Gradually add gelatin to cream cheese, mixing at medium speed on electric mixer until well blended
- Blend in lemon juice and peel
- Beat in marshmallow cream, fold in whipped topping
- Crush blueberries and fold into cream cheese mixture
- Chill until firm
- Garnish with additional frozen whipped topping, thawed and lemon peel
The meaning of fold here is to smoothly include one food or mixture into another. Usually, the lighter food or mixture is folded into the heavier food or mixture.
Blueberry Recipe - Smoothie
Blueberry Smoothie with Banana
What You Need:
- 1/2 bag of frozen blueberries
- 2 tablespoons blueberry preserves
- 8 ice cubes
- 1 1/2 cups of soymilk or vanilla, plain yogurt or milk
- 1 banana
How to Make It:
Blend all the ingredients into a blender until smooth. If you prefer, you can chop some of the blueberries and add those blueberry pieces into your glass of smoothie.
