Ingredients:
6 ozs. butter
6 ozs. sugar
2 eggs
2 tbsp. low fat milk mixed with 1 dessertspoon lemon juice
1 cup mashed banana (about 3 large ripe bananas)
1/4 tsp. vanilla essence (optional)
1/2 cup sliced almonds (optional)
vanilla essence (optional)
8 ozs. regular or almond flour )
1 tsp. baking powder ) sifted together
1 tsp. bicarbonate soda )
Method:
Cream butter and sugar.
Add the eggs, one at a time, and whisk well.
Add the milk and banana.
Add the mixed sifted flour, and vanilla (optional)
Pour into your baking tin and, (optional) sprinkle over sliced almonds to cover the top.
Then bake in moderate oven for about 1 hour.
