Asparagus Soup Recipe

Asparagus Soup

What You Need:

  1. ½ dozen sticks of asparagus

  2. ½ pint water

  3. ¼ pint milk

  4. 1 dessertspoonful of corn flour

  5. ¼ oz. butter

  6. Salt and pepper to taste

How to Make It:

  1. Boil the asparagus in the water till tender

  2. Add the seasoning

  3. Add corn flour smoothed in the milk

  4. Boil up and serve.

Pasta with Asparagus Salad

What You Need:

  1. 1 lb asparagus, blanched and cut in 1 inch pc

  2. 6 tablespoons olive oil

  3. 1 clove garlic, minced

  4. 1 lb pasta, linguini or fettuccini

  5. 1 cup tuna chunks

  6. ½ cup turkey or chicken, sliced in thin strips

  7. 8 to 10 black olives, sliced

  8. 2 tablespoons lemon juice or wine vinegar

  9. Salt and pepper to taste


How to Make It:

  1. Heat olive oil and cook garlic 1 min

  2. Cook pasta until al dente and drain

  3. Combine pasta with oil and garlic in large bowl

  4. Add remaining ingredients and toss well

Baked Asparagus Recipe

Asparagus Cheese with Tomato Tarts

What You Need:

  1. 2 sheets ready-rolled butter puff pastry

  2. 1/3 cup or about 125g basil, cashew and parmesan dip

  3. 2 x 170g bunches asparagus, trimmed

  4. 200g Gouda cheese, sliced thinly

  5. 2 tbsp pine nuts

  6. 200g grape tomatoes, halved

  7. 1 clove garlic, sliced thinly

  8. 2 tsp olive oil

  9. Freshly ground black pepper


How to Make It:

  1. Preheat the oven to 200 - 220 degrees Celsius

  2. Grease 2 oven trays

  3. Cut the pastry sheets in half

  4. Place on oven trays about 4 cm apart

  5. Spread 1 tbsp of the dip evenly over each pastry sheet, leaving a 2 cm border

  6. Arrange the asparagus over the dip mixture

  7. Halve or quarter the asparagus lengthways, if thick

  8. Top with Gouda

  9. Sprinkle with pine nuts

  10. Bake uncovered in a hot oven for about 15 minutes or until the pastry is puffed and browned

  11. Combine tomatoes, garlic and oil in a small bowl

  12. Place on a small baking tray and roast in hot oven for about 15 minutes or until wilted

  13. Top the tarts with roasted tomatoes and black pepper
